Blue Rock Candy (See Also: Blue Sky from Breaking Bad)

3 3/4 cup sugar

1 1/4 cup light Karo syrup (corn syrup yellows with age and you want it as clear as possible so make sure yours is clear)

1 cup water

1 Tbsp Oil flavoring (I used half a Tbsp of vanilla and half a Tbsp of orange extract, but you can just add 1 Tbsp of vanilla or pick any oil flavor you want)

1/4 teaspoon cream of tartar

Blue food coloring

1 Candy Thermometer (absolutely necessary)

Method:

Wrap a cookie sheet in foil and sprinkle it with powdered sugar or spray with non-stick cooking spray.

Mix sugar, Karo syrup, water, and cream of tartar in a pot and boil on medium/high until the mixture hits the hard crack stage (300-310°F on a candy thermometer).

Once you hit the hard crack stage, immediately add the oil and blue food coloring to your liking and don’t wait for the boil to stop or it will harden in the pot. (If your corn syrup was yellowish your blue sky will be green sky unfortunately).

Pour the mixture evenly onto the cookie sheet.

After hardening and cooling, place cookie sheet in paper bag and drop the bag to break the candy into pieces. Or find some other inventive way to break it up.

Store in airtight container.
